It was chewy and hard to cut, fat cap unrendered. ![]() There were grill marks on top but not the bottom. received was a thin, pale, unseared steak at medium well to well done. I ordered this to balance the high cost of a side of pan seared scallops. I was told by the waitress this cut falls just under there Prime steak cuts and above Choice cuts. I ordered the Iowa Premium NY Strip, medium rare.
